Equipment

  • Food Processor

Ingredients

  • 250 grams Marie Biscuits see notes
  • 1 cup desiccated coconut 90 grams
  • 2 tablespoons cocoa
  • 395 grams sweetened condensed milk one tin

Extra

  • ½ cup desiccated coconut to roll the balls in.

Instructions

  • Place the extra coconut into a separate bowl and set aside until needed.
  • Place the biscuits into a food processor and blitz until finely crushed. Alternatively you can use a rolling pin to crush them.
  • Transfer to a large bowl and add the remaining ingredients. Mix until combined.
  • Use a dessert spoon to scoop the mixture up and roll into balls.
  • Roll in the extra coconut until covered.
  • Repeat until you have used all of the Rum Ball mixture and then place them into the fridge to firm - or you can enjoy them straight away!

Thermomix Instructions

  • Place the extra coconut into a separate bowl and set aside until needed.
  • Place the biscuits into your Thermomix bowl and use the 1 sec Turbo Function 5 - 6 times to crush the biscuits until they resemble bread crumbs.
  • Add the cocoa powder, vanilla essence, coconut and condensed milk to your Thermomix bowl and mix for 15 seconds at speed 4. Scrape down the sides and mix for a further 10 seconds on speed 4 until combined.
  • Use a dessert spoon to scoop the mixture up and roll into balls.
  • Roll in the extra coconut until covered.
  • Repeat until you have used all of the Rum Ball mixture and then place them into the fridge to firm - or you can enjoy them straight away!

Notes

  • If you don't have a food processor to crush your biscuits, simply use a rolling pin to crush them instead.
  • You will need to use full fat versus a light version of sweetened condensed milk for this recipe as I find it holds the ingredients together better.
  • Also you will need to use desiccated coconut rather than coconut flakes as they will make it difficult the roll the mixture into smooth balls.
  • I like to use a dessert spoon to scoop up the mixture, however you can use a teaspoon for make your Rum Balls smaller if you wish.
  • For an adult version, add 2 tablespoons of rum to your mixture.
  • You can enjoy these Rum Balls as soon as you make them or place into the fridge to chill and they will firm.
  • These Rum Balls can be stored in the fridge in an airtight container for up to one week.
  • You can also freeze these Rum Balls for up to two months in a freezer safe container.
