Mint Maltesers Cheesecake Balls

Ingredients

  • 200 g pack of Chocolate Mint Slice Biscuits
  • 250 g of cream cheese – softened
  • 200 g of milk chocolate
  • 140 g pack of Mint Maltesers

Instructions

  • Line a baking tray (or plate) with baking paper and set aside until needed.
  • Place the Mint Slice biscuits into a food processor and blend until crumbs.
  • Add the softened cream cheese and blend until combined.
  • Scoop up the mint cheesecake mixture with a dessert spoon and place a Mint Malteser in the centre of the mixture and gently encase it in the cheesecake mixture and roll into a ball. Continue until all the mixture has been used.
  • Place the mint Maltesers Cheesecake Balls into the freezer for a minimum of half an hour - you want the balls to be very firm.
  • Break the milk chocolate into pieces and place in a microwave safe bowl to melt. I cook the chocolate for 30 second spurts until it’s almost melted and then mix until it’s completely melted.
  • Remove the balls from the freezer and poke a skewer into the bottom of the balls (slightly off centre so you don't hit the Malteser in the middle!) and dip them in the melted chocolate. Place on a wire rack to set. Repeat until all the balls are coated.
  • Roughly chop the remaining Mint Maltesers and while the chocolate is still soft, decorate the balls by sprinkling the Mint Maltesers pieces on top.
  • Put the balls back into the freezer for half an hour, or until the milk chocolate has set.

Notes

Don't worry if you don't have Mint Maltesers, you can use regular or dark chocolate maltesers and will still get a mint hit from the cheesecake.
