White Christmas Recipe

This classic White Christmas Slice recipe is such an easy dessert to take along to your Christmas get together and it's also perfect for a homemade gift. Both regular and Thermomix instructions included.

Equipment

  • 1 x 18 x 28cm slice tin
  • 1 x Large Mixing Bowl

Ingredients

  • 3 cups Rice Bubbles (or similar) 100 grams
  • 1 cup desiccated coconut 85 grams
  • ¾ cup icing sugar - sifted 110 grams
  • 1 cup milk powder 120 grams
  • 1 cup dried mixed fruit 175 grams
  • 250 grams copha
  • 100 grams glace cherries chopped

Instructions

  • Line the base and sides of your slice tin with baking paper.
  • Roughly cut the copha into eighths and place into a small saucepan over a medium heat. Cook for 4 - 5 minutes or until melted.
  • In the meantime, add the Rice Bubbles, coconut, icing sugar, milk powder, dried mixed fruit, and silvered almonds (if using) to a large bowl and stir to combine.
  • Carefully pour the melted copha over the dry ingredients and mix to combine.
  • Working quickly, pour the mixture into your prepared slice tin before sprinkling the glace cherries over the top.
  • Place the slice into the fridge for 2 hours (or until set) and then cut into pieces. Store the slice in the fridge.

Thermomix Instructions

  • Line the base and sides of your slice tin with baking paper.
  • Roughly cut the copha into eighths and place into your Thermomix bowl. Cook for 4 minutes, 60 degrees, speed 2 to melt. If there are still solid pieces after the cooking time has elapsed, cook for a further 2 minutes or until melted.
  • Add the Rice Bubbles, coconut, icing sugar, milk powder, dried mixed fruit, and silvered almonds (if using) to your Thermomix bowl and mix for 10 seconds, speed 2, reverse. You will need to use your spatula to push down the ingredients while the machine is mixing.
  • Scrape down the sides of the bowl and mix for a further 6 seconds speed 2, reverse.
  • Working quickly, pour the mixture into your prepared slice tin before sprinkling the glace cherries over the top.
  • Place the slice into the fridge for 2 hours (or until set) and then cut into pieces. Store the slice in the fridge.

Notes

We recommend using desiccated coconut for this recipe as shredded coconut will impact the consistency of the slice.
You can place this slice into the freezer for half an hour to help it set quickly.
For something extra special, you can drizzle some melted dark chocolate over the top of this slice.
You may also wish to add almonds or pistachios to this White Christmas Slice.
It's important to let this slice set completely before cutting into pieces.
Once cut, this slice is best stored in an airtight container in the fridge.
