Nut Free Muesli Slice Recipe

This nut free Muesli Slice recipe makes a great snack or lunch box treat! It's freezer friendly and both regular and Thermomix instructions are included.

Equipment

  • 18 x 28cm slice tray

Ingredients

  • 125 grams butter
  • 1 tablespoon golden syrup
  • ½ cup unprocessed bran 40 grams
  • 1 cup rolled oats 110 grams
  • ½ cup wholemeal flour 80 grams
  • ½ cup raisins 50 grams
  • ¼ cup dried cranberries 30 grams
  • ½ cup golden flaxseeds 70 grams
  • ¼ cup desiccated coconut 20 grams
  • 2 eggs

Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line am 18 x 28cm slice tin with baking paper - making sure to leave paper hanging over the sides.
  • Place all of your dry ingredients into a large bowl and stir to combine.
  • In a small saucepan, melt the butter and golden syrup and stir to combine.
  • Pour the melted ingredients into the bowl with the dry ingredients, along with the eggs and stir well.
  • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to smooth the surface.
  • Place the slice into the oven and bake for 25 minutes or until golden brown.
  • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to completely cool.

Thermomix Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line am 18 x 28cm slice tin with baking paper - making sure to leave paper hanging over the sides.
  • Place the butter and golden syrup into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 to melt.
  • Add the remaining ingredients and mix for 12 seconds, speed 4.5 on reverse.
  • Scrape down the sides of the Thermomix bowl and mix for 10 seconds, speed 4, reverse to combine.
  • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to smooth the surface.
  • Place the slice into the oven and bake for 25 minutes or until golden brown.
  • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to completely cool.

Notes

  • You can use wheat germ in place of unprocessed bran. Also, you can leave it out is you wish, just add some extra rolled oats.
  • You can use plain flaxseeds for this recipe if you can't find golden flaxseeds (I get mine from the health food aisle at our local supermarket). 
  • Instead of flaxseeds, you can also use sunflower seeds, pepitas, chia seed or a combination of all three.
  • When your slice comes out of the oven it's normal for there to be a little butter bubbling on the surface.
  • It's best to cut this slice once it's cool.
  • You can freeze this slice.
