  • 375 grams licorice allsorts roughly chopped

Icing

  • 200 grams milk chocolate broken into squares
  • 20 grams coconut oil

Instructions

  • Combine the butter, condensed milk and golden syrup in a medium saucepan over low heat and cook for 5 minutes or until butter has melted and the mixture is smooth.
  • Pour into a large heatproof bowl and add the crushed biscuits, coconut and licorice allsorts and stir until just combined.
  • Press the mixture into the base of the prepared pan.

Thermomix Instructions

  • Line an 18 x 28cm slice tray with baking paper. Make sure you leave paper hanging over the edges to help you remove the slice once it has set.
  • Place the biscuits into your Thermomix bowl and blitz for 6 seconds, speed 7 to crush. You may need to use the spatula to push the biscuits down towards the blades. Once crushed, transfer to another bowl until needed.
  • Without washing the bowl, add the butter, sweetened condensed milk and golden syrup to the Thermomix bowl. Cook for 3 minutes, 60 degrees, speed 2 to melt.
  • Add the crushed biscuits, chopped Licorice Allsort pieces and coconut. Mix for 15 seconds, speed 5 on reverse. Scrape down the sides of the Thermomix bowl and mix for a further 10 seconds, speed 5, reverse.
  • Press the mixture into the base of the prepared pan.
  • Place the chocolate and coconut oil into a microwave safe bowl and cook in 30 second spurts until it has just melted.
  • Pour the melted chocolate over the slice and place into the fridge for 2 hours to set.
  • Once set, cut into squares and serve.

Notes

  • You can use your Thermomix to chop the Licorice Allsorts if you wish however I do prefer to roughly chop them with a knife.
  • Add a little coconut oil to the chocolate layer to assist with cutting the slice without any cracks. This is optional or alternatively use copha or vegetable oil in its place.
  • You will need to use desiccated coconut for this recipe as coconut flakes or shredded coconut will give the slice a different consistency.
  • This slice is best stored in an airtight container in the fridge and enjoyed within 7 days.
  • You can freeze this slice without the chocolate layer for up to three months.
