Thermomix Instructions
Line an 18 x 28cm slice tray with baking paper. Make sure you leave paper hanging over the edges to help you remove the slice once it has set.
Place the biscuits into your Thermomix bowl and blitz for 6 seconds, speed 7 to crush. You may need to use the spatula to push the biscuits down towards the blades. Once crushed, transfer to another bowl until needed.
Without washing the bowl, add the butter, sweetened condensed milk and golden syrup to the Thermomix bowl. Cook for 3 minutes, 60 degrees, speed 2 to melt.
Add the crushed biscuits, chopped Licorice Allsort pieces and coconut. Mix for 15 seconds, speed 5 on reverse. Scrape down the sides of the Thermomix bowl and mix for a further 10 seconds, speed 5, reverse.
Press the mixture into the base of the prepared pan.
Place the chocolate and coconut oil into a microwave safe bowl and cook in 30 second spurts until it has just melted.
Pour the melted chocolate over the slice and place into the fridge for 2 hours to set.
Once set, cut into squares and serve.
- You can use your Thermomix to chop the Licorice Allsorts if you wish however I do prefer to roughly chop them with a knife.
- Add a little coconut oil to the chocolate layer to assist with cutting the slice without any cracks. This is optional or alternatively use copha or vegetable oil in its place.
- You will need to use desiccated coconut for this recipe as coconut flakes or shredded coconut will give the slice a different consistency.
- This slice is best stored in an airtight container in the fridge and enjoyed within 7 days.
- You can freeze this slice without the chocolate layer for up to three months.
