Protein Balls with Dates Recipe

These Protein Balls with Dates make a great snack when you are on the go. They can be made and then frozen and both regular and Thermomix instructions are included.

Equipment

Ingredients

  • 12 Medjool Dates - pit removed approximately 240 grams
  • 1 cup Almond Meal 100 grams
  • 30 grams protein powder
  • ½ cup desiccated coconut 40 grams
  • 2 tablespoon cacao 15 grams
  • 2 tablespoon golden flaxseeds 20 grams
  • 1 tablespoon chia seeds 10 grams
  • ¼ cup coconut oil liquid

Extra

  • cup desiccated coconut

Instructions

  • Place the extra coconut into a bowl and set aside until needed.
  • Remove the pits from the Medjool Dates and place them into a Food Processor.
  • Add the remaining ingredients and blitz until the mixture starts to 'clump' together.
  • Use a teaspoon to scoop up the mixture and squeeze it together before rolling into balls.
  • Roll the balls in the extra coconut and place onto a tray/or into a container
  • Place the balls into the fridge to firm up and chill.

Thermomix Instructions

  • Place the extra coconut into a bowl and set aside until needed.
  • Remove the pits from the Medjool Dates and place them into your Thermomix.
  • Add the remaining ingredients and select the 2 second 'Turbo' function.
  • Blitz 6 - 8 times or until the mixture starts to 'clump' together.
  • Use a teaspoon to scoop up the mixture and squeeze it together before rolling into balls.
  • Roll the balls in the extra coconut and place onto a tray/or into a container
  • Place the balls into the fridge to firm up and chill.

Notes

  • You can pitted dates for this recipe, you will need to soak them in boiling water for 20 minutes before you start to allow them to soften.
  • Golden Flaxseeds are found in the health food aisle at your local supermarket.
  • The extra coconut can be omitted if you prefer.
  • These protein balls are freezer friendly.
