Mars Bar and Baileys Cheesecake Sandwiches

  • 250 g of cream cheese
  • 4 Mars Bars - cut into large chunks
  • 50 ml of Baileys
  • 250 g pack of Chocolate Ripple Biscuits


  • Line a baking tray (or plate) with baking paper and set aside until needed.
  • Place the Mars Bars into a small saucepan and cook on a low heat for five minutes until they start to melt and become a lumpy mixture.
  • Transfer the Mars Bar mixture to a food processor and add the softened cream cheese and Baileys and mix until combined.
  • Use a dessert spoon to scoop up the cheesecake mixture and place it on the bottom of one chocolate ripple biscuit. Place another biscuit on top and pop the Mars Bar and Baileys Cheesecake Sandwiches onto the prepared baking tray.
  • Repeat until you have used all of the mixture.
  • Cover the tray and place the cheesecake sandwiches into the fridge for 2 hours to chill.


* If your cheesecake mixture is too runny ( this can happen if your mars bars are heated too much and your cream cheese is already super soft) simply pop the mixture into the fridge until it has chilled enough to scoop easily.
