Pancake Tuesday - Yummy Banana Pancakes

- 1 ⅓ cups self raising flour - sifted
- ½ teaspoon baking powder
- ¼ cup caster sugar
- 1 teaspoon cinnamon
- 2 eggs
- 250 g mashed banana
- 1 ⅓ cups of milk
- 40 g melted butter
Sift together the flour, baking powder and cinnamon into a large bowl. Stir through the sugar and make a well in the centre.
Add the eggs, milk, butter and mashed banana to the dry ingredients and whisk together until mixture is combined.
Preheat a non stick frying pan on medium heat, using a ¼ measuring cup, pour mixture into pan.
Cook each pancake for approximately 2 minutes, until they start to bubble, before flipping over and cooking for a further 1 minute.
Serve cooked pancakes with maple syrup, sliced banana and ice cream - yum!!
