Pancake Tuesday - Yummy Banana Pancakes

Ingredients

  • 1 ⅓ cups self raising flour - sifted
  • ½ teaspoon baking powder
  • ¼ cup caster sugar
  • 1 teaspoon cinnamon
  • 2 eggs
  • 250 g mashed banana
  • 1 ⅓ cups of milk
  • 40 g melted butter

Instructions

  • Sift together the flour, baking powder and cinnamon into a large bowl.  Stir through the sugar and make a well in the centre.
  • Add the eggs, milk, butter and mashed banana to the dry ingredients and whisk together until mixture is combined.
  • Preheat a non stick frying pan on medium heat, using a ¼ measuring cup, pour mixture into pan.
  • Cook each pancake for approximately 2 minutes, until they start to bubble, before flipping over and cooking for a further 1 minute.
  • Serve cooked pancakes with maple syrup, sliced banana and ice cream - yum!!
