Rice Bubbles with Honey Slice

This Honey and Rice Bubble recipe makes a great lunch box snack for the kids. It can also be made conventionally or using a Thermomix.

Equipment

  • 28 x 18cm slice tin

Ingredients

  • 125 grams butter
  • 3 tablespoons honey
  • 4 cups puffed rice cereal 120 grams
  • ½ cup desiccated coconut 40 grams

Instructions

  • Line an 18 x 28cm slice tin with baking paper, making sure to leave plenty of paper hanging over the sides to help you remove the slice once it has set.
  • Place the honey and butter together in a large saucepan and bring to a slow boil. Cook for 5 minutes, stirring occassionally.
  • Add the puffed rice cereal and coconut to the saucepan and mix to combine.
  • Transfer the mixture to your prepared slice tin and press the slice down with the back of a spoon to flatten it. Place the slice into the fridge for 2 hours to firm.
  • Cut into pieces to serve.

Thermomix Instrutions

  • Line an 18 x 28cm slice tin with baking paper, making sure to leave plenty of paper hanging over the sides to help you remove the slice once it has set.
  • Place the honey and butter (which has been cut into cubes) into your Thermomix bowl and cook for 3 minutes, 70 degrees, speed 2. If the butter hasn’t quite melted (this can happen depending on the temperature of the butter to begin with), cook for a further 1 minute, 70 degrees, speed 2.
  • Add the rice bubbles and coconut and mix for 5 seconds, speed 4, REVERSE.
  • Scrape down the sides of the bowl and mix for a further 3 seconds, speed 4, REVERSE to combine.
  • Transfer the mixture to your prepared slice tin and press the slice down with the back of a spoon to flatten it. Place the slice into the fridge for 2 hours to firm and then cut into pieces.

Notes

  • This slice will be ready so slice after 2 hours in the fridge.
  • To store, place in an airtight container and store in the fridge. This slice is best enjoyed within one week of making.
