Carrot Cake Muesli Slice

This Carrot Cake Muesli Slice is a healthy alternative to traditional Carrot Cake

  • 2 medium carrots
  • 40 g ¼ cup of wheat germ
  • 80 g ½ cup of wholemeal flour
  • 110 g 1 cup of rolled oats
  • 60 g ⅓ cup of brown sugar
  • 35 g ⅓ cup desiccated coconut
  • 125 g of butter
  • 75 g of raisins
  • 1 tablespoon rice malt syrup
  • 2 eggs


  • Line a 28 x 18cm slice tin with baking paper and set aside until needed. Preheat your oven to 190 degrees.
  • Grate the carrots into a large bowl - set aside until needed.
  • Place the butter, brown sugar and rice malt syrup into a small saucepan and cook over a low heat for 3 - 4 minutes or until the butter has melted and the ingredients have combined.
  • Add the rolled oats, wheat germ, wholemeal flour, desiccated coconut, raisins, eggs and melted butter mixture to the bowl with the grated carrots. Stir with a large spoon until combined.
  • Pour the mixture into your prepared tin and gently smooth the surface.
  • Place in the oven and bake for 25 minutes or until the top is golden.
  • ALlow the slice to cool completely in the tin before carefully removing it and cutting into squares.


You can also add ⅓ cup of roughly chopped walnuts to this recipe.
