Easy Apple Muffins
These easy Apple Muffins require just a few basic ingredients, are freezer friendly and both regular and Thermomix instructions are included.

- 120 grams butter
- 1 cup brown sugar 200 grams
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ⅔ cup milk 160 grams
- 1 egg
- 2 cups wholemeal flour 300 grams
- 1 & ½ teaspoon baking powder
- 1 apples chopped into pieces no bigger than 1 cm
- 2 tablespoon raw sugar optional
Line a 12 hole muffin tin with paper cases and preheat your oven to 190 degrees celsius (fan-forced).
Cube the butter and place into a microwave safe bowl. Cook in 30 second spurts until it has just melted.
Carefully pour the melted butter into a large bowl and add the brown sugar and cinnamon, stir to combine.
Place the milk into a jug, add the egg and vanilla extract. Use a fork or a whisk to combine.
Add the flour and baking powder to the bowl with the melted butter and sugar. Add the liquid ingredients and use a whisk to mix until almost combined - it's fine to still have a few small lumps in the mixture.
Add the chopped apple pieces and gently fold through with a spoon.
Divide the muffin mixture between the paper cases in the muffin tray. Sprinkle the raw sugar over the top of the muffins if you are using it.
Place the muffins into the oven and bake for 18 - 20 minutes or until cooked through when tested with a skewer. Carefully remove the muffin tray from the oven and allow the muffins to cool for 10 minutes before transferring to a wire rack to cool completely.
Thermomix Instructions
Line a 12 hole muffin tin with paper cases and preheat your oven to 190 degrees celsius (fan-forced).
Place the butter (which has been cubed) and brown sugar into your Thermomix bowl and cook for 3 minutes, 50 degrees, speed 2 to melt.
Add the flour, baking powder, cinnamon, vanilla extract, egg and milk and mix for 10 seconds, speed 4 to combine.
Scrape down the sides of your Thermomix bowl and add the chopped apple pieces. Mix for 8 seconds, speed 4 REVERSE.
Divide the muffin mixture between the paper cases in the muffin tray. Sprinkle the raw sugar over the top of the muffins if you are using it.
Place the muffins into the oven and bake for 18 - 20 minutes or until cooked through when tested with a skewer. Carefully remove the muffin tray from the oven and allow the muffins to cool for 10 minutes before transferring to a wire rack to cool completely.
- I used Red Royal Gala Apples for this recipe, however you can choose your favourite variety - including Granny Smith if you prefer.
- I don't peel my apples, however you can if you wish.
- Sprinkling raw sugar over the top of the muffins before they go into the oven helps to give them a 'crunch' you can omit this step if you wish. Also, you can use white sugar if you don't have any raw sugar.
- It's important to not cut your apple pieces too big - otherwise they won't cook through.
- You can use your Thermomix to chop the apples if you wish, I prefer to cut them myself to ensure the pieces are a similar size.
- You can also use white plain flour or self raising flour for this recipe - if using self raising flour you will not need to add the baking powder.
- These muffins are best stored in an airtight container in a dark place (eg the pantry) and enjoyed with four days.
- You can freeze these muffins if you wish.
