Easy Chicken Rissoles

These Chicken Rissoles are packed with vegetables, freezer friendly, simple to make and most importantly - family friendly! Both regular and Thermomix instructions are included.

Equipment

Ingredients

  • 500 grams chicken mince see notes
  • 1 zucchini approximately 120 grams
  • 1 carrot approximately 100 grams
  • 2 cloves garlic
  • 1 tablespoon onion flakes
  • 1 tablespoon soy sauce
  • 1 tbsp sweet chilli sauce

Instructions

  • Grate the carrot and zucchini and place into a large bowl.
  • Crush the garlic and add it along with the onion flakes and stir to combine.
  • Add the chicken mince, soy sauce and sweet chilli sauce and mix well until combined. Place the bowl into the fridge to chill for one hour.
  • Once chilled, scoop the mixture up using a spoon and shape into patties.
  • Preheat your frying pan using a little olive oil (or ghee) and cook each pattie for 3 minutes on one side before flipping to cook for a further 2 minutes or until cooked through.
  • Repeat until all of the mixture has been used.

Thermomix Method

  • Place garlic cloves, carrot and zucchini pieces into your Thermomix bowl and mix for 6 seconds, speed 6 to grate.
  • Add the chicken breast pieces , onion flakes, soy sauce and sweet chilli sauce and mix for 10 seconds, speed 5 to combine/mince.Scrape down the sides of your Thermomix bowl and mix for a further 5 seconds, speed 5 to mince the chicken completely and combine with the other ingredients.
  • Transfer the Thermomix bowl to the fridge and let it chill for one hour.
  • Once chilled, scoop the mixture up using a spoon and shape into patties.
  • Preheat your frying pan using a little olive oil (or ghee) and cook each pattie for 3 minutes on one side before flipping to cook for a further 2 minutes or until cooked through.
  • Repeat until all of the mixture has been used.

Notes

You can use chicken mince or chicken breast pieces (which you can mince yourself) if making conventionally, or if you are making these in your Thermomix, the method will be the same.
It’s important to chill the mixture before cooking as this is what helps the patties to keep their shape.
This mixture will make approximately 10 patties. You can make them smaller/larger however the cooking time will change.
This recipe is freezer friendly.
