Thermomix Double Chocolate Banana Bread Recipe

Ingredients

  • 150 grams self raising flour
  • 50 grams cocoa
  • 2 large bananas the browner the better
  • 125 grams butter
  • 60 grams coconut oil liquid
  • 140 grams brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 200 grams chocolate chips

Instructions

  • Preheat your oven to 180 degrees celsius (fan forced) and line a loaf tin with baking paper.
  • Place the butter into your Thermomix bowl and cook for 3 minutes, 50 degrees, speed 2 to melt.
  • Add the bananas, coconut oil, vanilla extract and egg and mix for 7 seconds, speed 5 to combine.
  • Scrape down the sides of your Thermomix bowl and add the self raising flour, cocoa and brown sugar. Mix for 12 seconds speed 5 to combine.
  • Add 150 grams of the chocolate chips and use your spatula to fold through the mixture.
  • Transfer the mixture to your prepared loaf tin and sprinkle the remaining chocolate chips over the top.
  • Bake for 45 - 50 minutes or until cooked through when tested with a skewer.

Notes

You will need approximately 150 grams of banana for this recipe. If your bananas are small, you may need to use 3.
You can use either milk or dark chocolate chips for this recipe.
If you don't have coconut oil, you can use a light oil in it's place - eg canola oil.
This recipe is freezer friendly.
