Seedy Muesli Slice Recipe

Equipment

  • 1 x 28 x 18 cm slice tin

Ingredients

  • ½ cup wheat germ 20 grams
  • 1 cup rolled oats 110 grams
  • ½ cup wholemeal flour 75 grams
  • ½ cup cranberries 70 grams
  • ½ cup sultanas 70 grams
  • ½ cup sunflower seeds 40 grams
  • ½ cup pepitas 40 grams
  • ¼ cup black chia seeds 40 grams
  • ¼ cup desiccated coconut 20 grams
  • 125 grams butter
  • 1 tablespoon golden syrup
  • 2 eggs lightly beaten

Instructions

  • Preheat your oven to 190 degrees celsius and line a slice tin with baking paper - making sure to leave paper hanging over the sides.
  • Place all of your dry ingredients into a large bowl and stir to combine.
  • In a small saucepan, melt the butter and golden syrup and stir to combine.
  • Pour the melted ingredients into the bowl with the dry ingredients, along with the eggs and stir well.
  • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to flatten the surface.
  • Place the slice into the oven and bake for 25 minutes or until golden brown.
  • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely. Once completely cooled, slice.

Thermomix Instructions

  • Preheat your oven to 190 degrees celsius and line a slice tin with baking paper - making sure to leave paper hanging over the sides.
  • Place the butter and golden syrup into your Thermomix bowl and cook for 3 minutes 60 degrees, speed 2 to melt.
  • Add the remaining ingredients and mix for 10 seconds, speed 4 to combine. Scrape down the sides of the bowl and mix for a further 10 seconds, speed 4 REVERSE.
  • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to flatten the surface.
  • Place the slice into the oven and bake for 25 minutes or until golden brown.
  • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely. Once completely cooled, slice.

Notes

You can substitute the seeds and dried fruits in this recipe based on your preferences.
This is a 'soft slice', which means it is important to let it cool completely before slicing.
