These easy Thermomix Spinach and Cheese Scrolls make a great snack, they are freezer friendly and both regular and Thermomix instructions included.

300gramsself raising flour
90gramsbutter
½teaspoonsalt
160gramsmilk

50gbutter softened
100gramsfeta cheesecrumbled
100gramstasty cheese
50gramsbaby spinach leaves
Instructions
Preheat the oven to 210 degrees and line an oven tray with baking paper.
Place the tasty cheese into your Thermomix bowl (cut into 3cm pieces) and blitz for 6 seconds, speed 6 to grate. Set aside until needed.
Without washing the bowl, place the flour, butter and salt into the Thermomix bowl and mix for 10 seconds on speed 9 until mixture is the same consistency as bread crumbs.
Add the milk and mix for 7 seconds on speed 4 to combine.
Use the kneading function to knead the dough for 2 minutes
Use a rolling pin to roll dough out until you have a 30 x 40cm rectangle.
Spread the softened butter over the dough, leaving a 2cm gap around the edges.
Sprinkle the baby spinach, feta and ⅔ of the grated tasty cheese over the top of the butter.
Starting at the long side carefully roll the dough until enclosed.
Place the scroll log into the fridge for 20 mins to chill.
Cut into 12 slices – approximately 2cm thick.
Place on a baking tray, making sure you leave enough room to rise and bake in oven for 20 minutes or until golden brown on top and cooked through.
Allow the scrolls to cool for 5 minutes and enjoy!
