This easy Apple Pikelets recipe is perfect for the whole family! It has no added sugar, is freezer friendly and both regular and Thermomix instructions are included.
Place the butter into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2.
Add the apples (cut into quarters) and mix for 5 seconds, speed 6 to grate.
Scrape down the sides of your Thermomix bowl and add the self raising flour, cinnamon, milk, egg and vanilla extract and mix for 15 seconds, speed 4 to combine.
Place a non stick frying pan on the stove over a medium high heat and add a little butter.
Place table spoon sized amounts of the mixture into the frying pan and cook for 1-2 minutes before carefully flipping over and cooking for a further minute.
Transfer the cooked pikelets to a plate and cover with foil to keep warm.
Repeat (adding a little extra butter as needed) until you have used all of the mixture.
Serve the pikelets either warm or cold with your favourite topping or keep in the fridge/freezer until required.
Notes
You can use any type of apples for this recipe and also leave the apple skin on if you prefer. This recipe is freezer friendly.
