Broccoli Bacon and Cheese Impossible Pie Recipe

Equipment

  • 1 x 5 cup capacity pie dish

Ingredients

  • 250 grams short cut bacon - chopped
  • 300 grams broccoli florets - chopped
  • 1 brown onion 80 grams - grated
  • 2 garlic cloves crushed
  • 1 & ½ cups tasty cheese 100 grams - grated
  • ¼ cup parmesan cheese 40 grams - grated
  • ½ cup self raising flour 75 grams
  • 5 eggs
  • 1 & ½ cups of milk 380 grams
  • salt and pepper to taste

Instructions

  • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced).
  • Roughly chop the bacon and sprinkle over the base of the pie dish.
  • Add the finely diced brown onion, chopped broccoli florets, grated cheeses and flour and gently stir through until all of the ingredients have been coated in flour.
  • In a large jug, whisk together the eggs, milk, crushed garlic and a pinch of salt and pepper before carefully pouring it over the mixture in the pie dish.
  • Place the pie dish into the oven and cook for 45 minutes or until the pie has risen and it golden on top.

Thermomix Instructions

  • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced).
  • Place the tasty and parmesan cheese into your Thermomix and mix for 8 seconds, speed 9 to grate. Transfer to your pie dish.
  • Without washing the bowl, add the bacon (which has been torn into half), brown onion and garlic cloves and mix for 4 seconds, speed 6 to grate. Scrape down the sides of your bowl and transfer to your pie dish.
  • Without washing the bow, add the broccoli florets to your Thermomix bowl and mix for 3 seconds, speed 5 to chop. If you would like them chopped finer, mix for a further 3 seconds, speed 5. Transfer to your Pie dish.
  • Add the self raising flour and use a spoon to mix - ensuring all of the ingredients are coated in flour.
  • Without washing the bowl, add the milk, eggs and salt and pepper and mix for 10 seconds speed 6 to combine. Carefully pour over the contents in your pie dish.
  • Place the pie dish into the oven and cook for 45 minutes or until the pie has risen and it golden on top.

Notes

You can substitute ham for the bacon in the recipe.
This Impossible Pie is also freezer friendly and can be stored for up to two months.
