Smartie Cookies Recipe

Equipment

Ingredients

  • 125 grams butter softened
  • 1 teaspoon vanilla extract
  • 1 cup caster sugar 220 grams
  • 2 eggs
  • 2 cups plain flour 300 grams
  • 1 cup desiccated coconut 85 grams
  • 1 teaspoon baking powder
  • 200 grams Smarties

Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line two trays with baking paper.
  • Place the butter and caster sugar into a bowl of an electric mixer and mix for 5 - 6 minutes or until pale and creamy.
  • Add the vanilla extract and eggs and mix to combine.
  • Add the flour, baking powder and desiccated coconut and mix until just combined.
  • Use a teaspoon to scoop up balls of the cookie mixture and place onto your prepared baking trays. Flatten the surface of the biscuits slightly and decorate with Smarties.
  • Place the trays into your pre-heated oven and bake for 12 - 15 minutes or until the cookies are starting to turn golden.
  • Let the cookies cool on the trays for 10 minutes before transferring to a wire rack to cool completely.

Thermomix Instructions

  • Preheat your oven to 190 degrees celsius (fan-forced) and line two trays with baking paper
  • Place the butter and caster sugar into your Thermomix bowl and mix for 30 seconds on speed 3.
  • Scrape down the sides of the bowl and mix for a further 15 seconds, speed 3 or until pale and creamy.
  • Add the eggs and vanilla extract and mix for 20 seconds on speed 4 to combine.
  • Add the flour, coconut and baking powder and mix for 15 seconds on speed 4 or until combined. Stop after 10 seconds to scrape down the sides.
  • Use a teaspoon to scoop up balls of the cookie mixture and place onto your prepared baking trays. Flatten the surface of the biscuits slightly and decorate with Smarties.
  • Place the trays into your pre-heated oven and bake for 12 - 15 minutes or until the cookies are starting to turn golden.
  • Let the cookies cool on the trays for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • It is important to use butter which is at room temperature, as butter which is still chilled will not combine with the sugar.
  • The desiccated coconut can be substituted with flour, I suggest starting with ½ a cup extra.
  • If your mixture is too 'soft' add an extra tablespoon or two of flour.
  • Place the Smarties close to each other on the unbaked cookies, they will spread out as the dough expands during baking.
  • This recipe can be doubled.
  • Any unused dough can be frozen.
  • Store the cooked biscuits in an airtight container for up to seven days.
  • The cooked biscuits can also be frozen for up to two months.
