Crispy Baked Potato Wedges

These crispy baked Potato Wedges make a perfect side or meal on their own! They are lightly flavoured so you can enjoy them straight from the oven or why not dip them in your favourite sauce?

Ingredients

  • 1 kg potatoes
  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon dried mixed herbs
  • 1 teaspoon sweet paprika
  • pinch salt

Instructions

  • Preheat the oven to 220 degrees celsius (fan-forced).
  • Slice your potatoes in half and cut into even sized wedges. Place into a large bowl.
  • Place the olive oil, dried mixed herbs, sweet paprika and salt into a small bowl and mix to combine.
  • Pour the oil mixture over the potato wedges and use a spoon (or your hands) to mix to coat.
  • Place the wedges onto a large baking tray and place into your preheated oven.
  • After 30 minutes of cooking time, carefully remove the tray from the oven and use pair of tongs to flip the wedges over before returning to the oven for a further 15 - 20 minutes or until the wedges are golden and cooked through.
  • Remove the potato wedges carefully from the oven and serve.

Notes

  • You can use any type of potato for this recipe.
  • I leave the potato skin on, however you can remove it if you prefer.
  • The time it takes to cook your wedges may vary depending on the size. In this recipe, the wedges are no more than 5mm thick and approximately 5 - 6 cm long.
  • I purchased a crinkle cut knife from our local supermarket. You can also find them in homewares stores.
