Wholemeal Apple and Cinnamon Pikelets

Ingredients

  • 100 g of grated apples approximately 2 medium sized apples
  • 150 g 1 cup of wholemeal self raising flour
  • 60 g of melted butter
  • 1 tablespoon of caster sugar
  • 185 ml of milk
  • 1 egg
  • 1 teaspoon of cinnamon
  • Butter to grease the frying pan

Instructions

  • In a large bowl add the wholemeal self raising flour, caster sugar, cinnamon and grated apples and stir to combine.
  • In a jug, add the milk, egg and cooled melted butter and combine well with a small whisk.
  • Pour the liquid ingredients into the bowl with the flour and use a whisk to combine all of the ingredients.
  • Place a non stick frying pan on the stove over a medium high heat and add a little butter.
  • Place table spoon sized amounts of the wholemeal apple and cinnamon pikelet mixture into the frying pan and cook for 1-2 minutes before carefully flipping over and cooking for a further minute.
  • Transfer the cooked Apple and Cinnamon Pikelets to a plate and cover with foil to keep warm.
  • Repeat (adding a little extra butter as needed) until you have used all of the mixture.
  • Serve the pikelets either warm or cold with your favourite topping or keep in the fridge/freezer until required.

Notes

You can use any type of apples for this recipe and also leave the apple skin on if you prefer.
You can also choose to leave out the caster sugar if you prefer.
