Friday Afternoon Chocolate Goodness - choc chip banana blondies
These soft and fudgey Choc Chip Banana Blondies will become your new favourite dessert and sweet treat! Both regular and Thermomix instructions are included.

- 100 grams butter - chopped
- 200 grams white chocolate broken into pieces
- 1 cup caster sugar 220 grams
- 1 egg
- 2 bananas mashed - approximately 150 grams
- 1 teaspoon vanilla extract
- 1 & ⅓ cups plain flour 200 grams
- ¼ teaspoon baking powder
- ¾ cup walnuts chopped 60 grams
- ½ cup dark chocolate chips 80 grams
Preheat oven to 180 degrees & grease and line the base and sides of a 20cm square cake pan with baking paper
Place the butter and 200 grams of the white chocolate into a microwave safe bowl and cook for 30 second spurts until the chocolate and butter have just melted. Stir to combine.
Transfer chocolate mixture to a large bowl and stir in sugar, egg, banana and vanilla
Sift over flour and baking powder, stir to combine, the fold in the nuts and dark chocolate chips
Pour batter into the pan and bake for 35 - 40 minutes or until golden, cool completely in pan
Once cooled, carefully remove from the baking tin and cut into squares.
Thermomix Instructions
Preheat oven to 180 degrees & grease and line the base and sides of a 20cm square cake pan with baking paper
Place the butter and white chocolate into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 or until the chocolate has just melted.
Add the bananas, vanilla extract and egg and mix for 10 seconds, speed 5 to combine.
Scrape down the sides of the Thermomix bowl and add the flour, baking powder, caster sugar and mix for 10 seconds, speed 4.
Scrape down the sides of the Thermomix bowl and add the walnuts and chocolate chips and mix for 6 seconds, speed 5.
Pour batter into the pan and bake for 35 - 40 minutes or until golden, cool completely in pan
Once cooled, carefully remove from the baking tin and cut into squares.
- This slice is meant to be quite soft and fudgey. To check if it's cooked, you will have moist crumbs attach to a skewer when inserted in the middle.
- It's important to allow these blondies to cool completely in the tin (as the blondies will continue to set) before carefully removing and cutting into squares.
- You will need two ripe bananas for this recipe.
- You can omit the walnuts from this recipe if you wish.
- This recipe is best stored in an airtight container in a cool place.
