Friday Afternoon Chocolate Goodness - choc chip banana blondies

These soft and fudgey Choc Chip Banana Blondies will become your new favourite dessert and sweet treat! Both regular and Thermomix instructions are included.

Equipment

  • 20 x 20 cm square cake tin

Ingredients

  • 100 grams butter - chopped
  • 200 grams white chocolate broken into pieces
  • 1 cup caster sugar 220 grams
  • 1 egg
  • 2 bananas mashed - approximately 150 grams
  • 1 teaspoon vanilla extract
  • 1 & ⅓ cups plain flour 200 grams
  • ¼ teaspoon baking powder
  • ¾ cup walnuts chopped 60 grams
  • ½ cup dark chocolate chips 80 grams

Instructions

  • Preheat oven to 180 degrees & grease and line the base and sides of a 20cm square cake pan with baking paper
  • Place the butter and 200 grams of the white chocolate into a microwave safe bowl and cook for 30 second spurts until the chocolate and butter have just melted. Stir to combine.
  • Transfer chocolate mixture to a large bowl and stir in sugar, egg, banana and vanilla
  • Sift over flour and baking powder, stir to combine, the fold in the nuts and dark chocolate chips
  • Pour batter into the pan and bake for 35 - 40 minutes or until golden, cool completely in pan
  • Once cooled, carefully remove from the baking tin and cut into squares.

Thermomix Instructions

  • Preheat oven to 180 degrees & grease and line the base and sides of a 20cm square cake pan with baking paper
  • Place the butter and white chocolate into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 or until the chocolate has just melted.
  • Add the bananas, vanilla extract and egg and mix for 10 seconds, speed 5 to combine.
  • Scrape down the sides of the Thermomix bowl and add the flour, baking powder, caster sugar and mix for 10 seconds, speed 4.
  • Scrape down the sides of the Thermomix bowl and add the walnuts and chocolate chips and mix for 6 seconds, speed 5.
  • Pour batter into the pan and bake for 35 - 40 minutes or until golden, cool completely in pan
  • Once cooled, carefully remove from the baking tin and cut into squares.

Notes

  • This slice is meant to be quite soft and fudgey. To check if it's cooked, you will have moist crumbs attach to a skewer when inserted in the middle.
  • It's important to allow these blondies to cool completely in the tin (as the blondies will continue to set) before carefully removing and cutting into squares.
  • You will need two ripe bananas for this recipe.
  • You can omit the walnuts from this recipe if you wish.
  • This recipe is best stored in an airtight container in a cool place.
