Anzac Slice Recipe
This classic Anzac Slice recipe is a great treat for the whole family and is perfect for school lunchboxes, both regular and Thermomix instructions included.

1 18 x 28cm slice tray

- 1 cup rolled oats 110 grams
- 1 cup plain flour 150 grams
- ¾ cup brown sugar 130 grams
- 1 cup desiccated coconut 70 grams
- 125 grams butter chopped
- 2 tablespoons golden syrup
- ½ teaspoon bicarbonate of soda
Preheat your oven to 180 degrees celsius (fan-forced) and line an 18 x 28cm slice tin with baking paper.
Place the butter, brown sugar and golden syrup into a small saucepan and cook over a medium/low heat while stirring occasionally for 4-5 minutes or until the butter and melted and combined with the other ingredients.
Add the bicarbonate of soda and use a whisk to combine.
In a large bowl, add the flour, coconut and rolled oats. Add the butter mixture and stir well to combine.
Transfer to your prepared baking tray and bake for 22 - 25 minutes or until golden.
Leave the Anzac Slice in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely.
Thermomix Instructions
Preheat your oven to 180 degrees celsius (fan-forced) and line an 18 x 28cm slice tin with baking paper.
Place the butter, golden syrup and brown sugar into the Thermomix bowl and cook for 2 minutes, 100 degrees, speed 2 to melt.
Scrape down the sides of the bowl and add the bicarbonate of soda and mix for 10 seconds on Speed 3.
Add the rolled oats, plain flour and coconut and mix for 20 seconds, REVERSE, Speed 2 to combine. Scrape down the sides of the bowl and mix for a further 10 seconds, REVER, speed 2 until combined.
Place the mixture into the tray and press down firmly before popping it into the oven to bake for 22-25 minutes or until lightly golden brown.
Leave the Anzac Slice in the baking tray to cool for 10 minutes before transferring to a wire rack to cool completely.
- It is important to not skip adding the bicarbonate of soda, if you miss this step your slice will be hard.
- I recommend using rolled oats and not quick oats for this recipe.
- The golden syrup can be substituted with honey, however your slice will have a different flavour.
- Allow the cooked slice to cool in the baking tray before removing and slicing into pieces, otherwise it will crack if moved/cut while still warm.
- To store, place in an airtight container and store at room temperature for up to seven days.
