Well the school holidays are now officially over and while school doesn’t go back until tomorrow (thanks public holiday!) I think we are ALL ready to get back into some kind of routine. Don’t get me wrong, I’ve enjoyed the slow mornings of not having to rush everyone out of the door to get to school on time, however it will be nice to get back into the swing of things (and for the boys to go back to having a proper bedtime!) for one more term before the school year ends – yep I can’t believe it’s term 4 already either!
Over the past couple of weeks it’s been a bit quiet in the kitchen when it comes to new recipes for the site, as we’ve had quite a few other things going on in our world which has kept us busy and to be honest, lacking a bit of motivation. Thanks to a head cold/sinus infection which hung around for a few weeks and a hectic schedule, by the end of last term I was well and truly spent and needed a break, so the boys and I have spent the past few weeks having fun in the kitchen and I thought I’d share some of the recipes we’ve been making with you today.
Sitting down to a pancake breakfast on the weekend is a tradition in our house and I was more than a little chuffed to arrive home from my morning walk to this cute breakfast put together by my husband and the boys. While my husband doesn’t follow a recipe when making pancakes, you can find my favourite easy Pancake recipe here.
I’m back on the quesadilla bandwagon in a big way and my current favourite combination is Chicken, Avocado, Tomato and Cheese. These are such an easy recipe to make for the entire family as you can easily alter the fillings to suit everyone’s taste. To make life a bit easier, I cook around the chicken breast at the beginning of the week and then shred it before popping into a container in the fridge to use during the week.
I’ve been including quite a few meals from my freezer stash in my meal planning recently, especially last week with the school holidays AND Mr 4 having his tonsils and adenoids removed. These Beef and Veggie Sausage Rolls make an easy meal or snack for both me and the kids.
Finally, the boys (including my husband) have been obsessed with this Anzac Slice for the past few weeks – in fact I think the longest it’s lasted is about 3 days!
