These Strawberry and Banana Pancakes will become your new favourite pancake recipe – I promise!!
When my husband and the boys went out on their regular Saturday afternoon ‘boys outing’ (aka boys go wild) and came home with four containers of strawberries – as you do. Now, all three of my boys have healthy appetites, but even I knew they wouldn’t be able to make their way through four containers of strawberries before they started to turn a bit funky, so I knew I needed to come up with something to make with them.
It was while preparing dinner on Saturday night and spying a couple of browning bananas in the fruit bowl that the thought crossed my mind I should make Banana Pancakes, as we hadn’t had them for awhile. That’s when my brilliant idea hit me – why not make strawberry and banana pancakes!
I turned to my Banana Pancake recipe, removed the cinnamon (although I think they would still taste great with it) and added a smudge of vanilla. I was really careful to gently fold the strawberries through the batter, as I wanted the to retain their shape and not go mushy.
The first pancake was a total write off (why does this always happen?) and I just had to try it while I cooked the rest. Even on it’s own, it tasted great. I served these drizzled with maple syrup, a few sliced strawberries and some whipped cream – delicious! Luckily there were a couple left the next morning which I also enjoyed for breakfast – minus the whipped cream of course!
Tips for Making these Strawberry and Banana Pancakes:
- Gently fold through the strawberries and you want them to hold their shape.
- You can freeze the cooked pancakes.
- You will need 2 bananas for this recipe.
- The caster sugar can be left out of this recipe.

Strawberry and Banana Pancakes
Equipment
- Frying Pan
Ingredients
- 1 & ⅓ cups self raising flour 200 grams
- ½ teaspoon baking powder
- 2 tbs caster sugar 30 grams - optional
- 1 teaspoon vanilla extract
- 2 eggs
- 2 ripe bananas - mashed you will need 2 bananas for this recipe
- 1 & ⅓ cups of milk 180 grams
- 125 grams strawberries thinly sliced plus extra strawberries to decorate and serve
- Butter to grease pan
Instructions
- Sift together the flour and baking powder into a large bowl. Stir through the sugar and make a well in the centre.
- Add the eggs, milk, vanilla and mashed banana to the dry ingredients and whisk together until mixture is combined.
- Add the sliced strawberries and gently fold mixture to combine.
- Preheat a non stick frying pan on medium heat, using a ¼ measuring cup, pour mixture into pan.
- Cook each pancake for approximately 2 minutes, until they start to bubble, before flipping over and cooking for a further 1 minute.
- Serve cooked pancakes with maple syrup, sliced strawberries (or even banana) and cream too – yum!!
Thermomix Instructions
- Place the bananas (cut in half), eggs, vanilla extract and milk into your Thermomix bowl and mix for 6 seconds, speed 6 to combine.
- Scrape down the sides of the bowl and add the self raising flour, caster sugar (if using) and baking powder. Mix for 10 seconds, speed 4.
- Add the chopped strawberries and use your spatula to stir them through.
- Preheat a non stick frying pan on medium heat, using a ¼ measuring cup, pour mixture into pan.
- Cook each pancake for approximately 2 minutes, until they start to bubble, before flipping over and cooking for a further 1 minute.
- Serve cooked pancakes with maple syrup, sliced strawberries (or even banana) and cream too – yum!!
Notes
- You will need 2 ripe bananas for this recipe.
- The caster sugar can be left out if your prefer.
- These pancakes are freezer friendly.
