Maltesers MaltEaster Bunnies are hands down my favourite Easter chocolate treat – a big call I know! These Malteaster Bunny Cupcakes are a great way of combining my love for these chocolate treats with another one of my big loves – cake!
Not that I really need much of an excuse to make cupcakes, but these Malteaster Bunny Cupcakes are a fun Easter project to make with the kids (especially when they are bored!!) and my boys had a great time decorating their ‘special cakes’ – although they may have eaten a few too many of the easter eggs!
We decided to keep things simple with our decorations and just used a few M&M’s Speckled Easter Eggs to decorate them (also another one of my favourites!) but you can go as all out as you like with your decorations, personally I also LOVE these Malteser Bunny Chocolate Cupcakes from Bake Play Smile, how could anyone resist a cupcake topped with Maltesers?!

Malteaster Bunny Cupcakes
Ingredients
- 125 g of unsalted butter - softened
- ⅔ cup 160g of caster sugar
- 1 ½ cups 225g of self raising flour
- ½ cup milk
- 2 teaspoons of vanilla essence
- 2 eggs
- For the icing/decorations
- 125 g of unsalted butter - softened
- 2 cups 300g of icing sugar
- 1 teaspoon of vanilla essence
- Food colouring of your choice
- Piping bag with star nozzle tip
- 12 Malteaster mini bunnies
- 1 pack of M&M's specked easter eggs
Instructions
- Preheat your oven to 180 degrees and line a 12 hole muffin tin with paper cases.
- Place the softened butter, self raising flour, milk, vanilla and eggs into a bowl and beat with electric beaters on a low sped for 2 minutes or until mixture is well combined.
- Increase the speed of the electric mixer and beat for a further two minutes until smooth and pale.
- Spoon the cupcake mixture into the prepared muffin tin and bake for 20 minutes or until the lemon cupcakes are golden and cooked through when tested with a skewer.
- After 5 minutes, carefully transfer the cupcakes to a wire rack to cool completely.
- To Decorate.
- Sift the icing sugar into a small bowl and set aside until needed.
- In an electric mixer, beat the butter until it’s pale and creamy.
- With the mixer on a low speed, gradually add the icing sugar and vanilla essence and beat well until combined.
- Add a few drops of food colouring until you achieve your desired colour and beat until well combined.
- Transfer your buttercream into a piping bag and pipe the top of a cooled cupcake.
- Place a mini MaltEaster Bunny into the centre of the cupcake and carefully place a few M&M's speckled easter eggs around it.
- Repeat until all of your cupcakes are decorated.
Nutrition
Thermomix MaltEaster Bunny Cupcakes
- Preheat your oven to 180 degrees and line a 12 hole muffin tin with paper cases.
- Place the flour, softened butter, sugar, vanilla extract, milk and eggs into your Thermomix bowl. Mix for 15 seconds on speed 5 before scraping the sides and mixing for a further 15 seconds on speed 5 or until the mixture is pale and smooth.
- Place the mixture into your prepared cupcake tray and place in the oven to bake for 20 minutes or until the cakes begin to turn golden on top and are cooked through when tested with a skewer.
- Once cooked, carefully remove the trays from the oven and allow the cakes to cool for 5 minutes in the tin before transferring to a wire rack to cool completely.
- Follow the instructions from step 7 as above.
