One of my favourite things about blogging, is the beautiful friendships I have developed with many lovely ladies along the way – amazing women whom I never would have met otherwise. A couple of weeks ago when the very talented Dannielle from Zamamabakes was driving from all the way down the coast to come and visit, I had to make sure there were some yummy treats to help make her journey worthwhile!
After some miscalculation with our weekly fruit and veggie order (totally all my fault), we’d ended up with around 2 kilos of lemons sitting in the fruit bowl begging to be used. After making my usual go to lemon recipes – No Bake Lemon Slice and Lemon and Coconut Cake, I was keen to tray something a little bit different as well as make a bigger dent in my pile of lemons.
I came across this recipe for Lemon Bars in an old footy club recipe book, which was also full of a heap of other recipes I can’t wait to try. I was a little uncertain how this was going to turn out – especially when it came time to sprinkle the extra dough over the top, but when the slice came out of the oven I was pleasantly surprised.
We spent most of our time chatting away, and only briefly paused to refuel in order to keep up our energy for talking so I didn’t really get a chance to stop and enjoy these. My husband however had plenty of time to taste these easy Lemon Bars and enjoy after taking the remaining slice to work, his verdict? A winner.
Lemon Bars
Ingredients
- Base
- 1 cup of self raising flour
- ½ cup of caster sugar
- 60 g of butter
- 1 egg
- Filling
- ¼ cup of lemon juice
- ½ cup of caster sugar
- 1 egg
- 60 g of butter
Instructions
- Preheat your oven to 180 degrees and line a slice tin with baking paper - make sure you leave plenty of paper hanging over the sides to remove the slice easily from the tin.
- To make the base - sift the flour into a bowl before adding the sugar and stirring to combine.
- Rub in the butter and then add the egg to form a smooth soft dough.
- Place approximately ⅔ of the dough to cover the base of the lined baking tin.
- To make the filling
- Place the lemon juice, caster sugar, egg and butter into a small saucepan and cook over a low heat until the ingredients have all combined and the mixture has thickened.
- Pour the hot lemon filling over the dough and then crumb the remaining dough over the top.
- Place the Lemon Bars into your oven and cook for 25 minutes or until the top of your slice is a lovely golden brown.
- Allow slice to cool in the tin before carefully removing - using the overhanging baking paper. Cut into squares and enjoy!
Easy Lemon Bars Thermomix Instructions
1. Preheat your oven to 180 degrees and line a slice tin with baking paper – make sure you leave plenty of paper hanging over the sides to allow easy removal of the slice from the tin.
2. Place the flour, sugar and butter into your Thermomix Bowl and mix for 10 seconds on speed 9 or until the mixture resembles breadcrumbs.
3. Add the egg and mix for 15 seconds on speed 5 or until a dough has formed.
4. Place approximately ⅔ of the dough (enough to cover the base) into the tin and gently flatten the surface.
5. To make the lemon filling, insert your butterfly and place all of the ingredients for the filling into a clean bowl before cooking for 12 minutes, 55 degrees, speed 3.
Continue as above from step 7.
To make these easy Lemon Bars just that little more special, dust them with icing sugar just before serving.

Lauren, these look just so delicious. I am a huge fan of lemons. I will definitely have to bake these. Meanwhile, we made your rice bubble bars on the weekend and the girls loved them. (I’ve also been there and done that with accidentally over ordering. I ended up with four bags of tomatoes once!) I think it’s lovely you ladies have formed a strong friendship. My favourite lemon recipe is called Lemon Tingle Slice. I can’t remember off the top of my head but I think it might be a no bake one. All I know is it’s YUMMY!
