Welcome back to another Fabulous Foodie Fridays party. Can you believe that this time next week we will be in December! Seriously, where has the year gone? Anyway, it was very exciting to see some delicious Christmas recipes linked up last week… and I’m sure there will be lots more in the next few weeks! So let’s get straight into the yumminess and take a peak at a few of my fave recipes from last week.
First up are these Banana Smoothie Ice Creams from Cooking for Busy Mums. The weather here is Brisbane has been so hot, humid and plain yuck these past few weeks, I love the idea of enjoying something cool and delicious.
I’m just a little excited to see Peaches are coming into season, I can’t wait to try this Peach Salad from Steph’s Joy.
My boys love peanut butter and I have no doubt they will also love this Peanut Butter and Chicken Stir Fry from My Kitchen Stories.
Each Salad in the Land of Zonkt’s Simple Salad series raises the bar, I can’t wait to try this Pumpkin and Pomegranate Salad with Honey Dressing.

For our feature recipe this week I thought I’d share with you a yummy recipe for Fruity French Toast. Whether you’re looking for the perfect Christmas breakfast or just a yummy treat for a lazy weekend, this is just what you need! I’ve included my recipe for berry compote, but if you’re running short on time, then this is just as delicious served with greek yoghurt and chopped fresh strawberries.
I love making French Toast but I also love raisin toast… so this is the perfect way to combine the two into one totally delicious dish. You can use a fancy fruit loaf or you can simply use a loaf of raisin toast from the supermarket. Either option works beautifully.
When I make French Toast I always use cinnamon, nutmeg and vanilla extract in the egg mixture – it really is just the best flavour combination. It’s also important to make sure that you allow any excess egg mixture to drip off the bread so that it doesn’t end up really gluggy. Oh and check that your frying pan is over a medium-low heat as you definitely don’t want your Fruity French Toast to burn.
While the Fruity French Toast is cooking, whip up a quick and easy berry compote to pour over the top. It’s also nice to serve your French Toast with a scoop of ice-cream or some whipped cream on the side. But despite my incredible sweet tooth, my favourite thing to serve with this Fruity French Toast is just a scoop of thick greek yoghurt! It balances out the sweetness of the berry compote perfectly.
Fruity French Toast - Fabulous Foodie Fridays #29
- Melted butter to grease
- 2 eggs
- 80 ml 1/3 cup milk
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- 4 slices raisin bread
- ¼ cup caster sugar
- 300 g frozen mixed berries
- 2 tbs cold water
- Preheat oven to 160°C.
- Use a fork to whisk together the eggs, milk, cinnamon and vanilla extract in a medium bowl.
- Heat a non-stick frying pan over medium heat and melt butter in the pan to lightly grease.
- Dip one of the slices of raisin bread into the egg mixture to evenly coat on both sides.
- Let any excess mixture drip off the bread.
- Cook for 2 minutes on each side or until golden.
- Place cooked french toast onto a baking tray and pop into the oven to keep warm.
- Repeat process with remaining bread slices.
- Meanwhile, to make the berry compote, place the sugar and cold water in a small saucepan and stir over low heat until dissolved.
- Increase the heat and bring to a boil for 3 minutes or until mixture has slightly thickened.
- Remove from the heat, add in the berries and stir well.
- Serve over the warm french toast.
