    Each Wednesday afternoon after our delivery, both of the boys insist on ‘helping’ look through what we’ve received and (thankfully) also help to put it all away.  In the past they have transformed the sturdy Fruit and Vegetable boxes into cars, boats and even ‘caves’ and have got much enjoyment and fun out of the boxes before the inevitable fights start. Aussie Farmers Direct are including fun animal cut outs on both their Couples and Family Fruit and Veg and Small Fruit Boxes, so now along with the convenience of having farm fresh fruit and vegetables delivered to your door (and new customers can receive 30% off their first order with the code CBM30, with a minimum spend of $50) the kids can put those empty boxes to use by cutting out and decorating ‘Rudolph the Reindeer‘ (pictured), with ‘Cloey the Cow’ and a range of other farm animals coming soon!”

    Another thing I love about our Aussie Farmers Direct delivery is that it makes it so easy to put together easy family meals, and don’t forget along with milk and fruit and vegetables you can also shop a huge range of meat and poultry items, dairy and my favourite (of course!) baked goods.

    This family friendly Chicken Cobb Salad recipe is always a winner in our house and best of all practically all of the ingredients can be delivered to my door.  You can easily adjust the ingredients in the Cobb Salad to suit the tastes of your family and we find it makes enough to serve two adults and two kids as a main meal with plenty of yummy leftovers for the next day.  It’s also a great recipe for the kids to get involved with and my boys love to help selecting which vegetables we are going to use and of course taste testing along the way!

    I can hear many of you saying that your kids would NEVER willingly eat a salad, and I totally get that, however I find by getting the kids involved in putting it together and then letting them serve themselves at dinner time, it not only helps them learn new skills but also encourages them to eat more.

    Ingredients
      

    • 1 cos lettuce
    • 3 large potatoes
    • 2 corn cobs
    • 3 carrots
    • 4 eggs
    • 3 large Tomatoes
    • 1 cucumber
    • 1 chicken breast - approximately 300g.
    • 3 tablespoons of mayonnaise
    • 1 teaspoon of seeded mustard - optional
    • salt and pepper
    • 1 tablespoon of olive oil
    • 1 teaspoon of dried mixed herbs
    • 2 tablespoons of butter
    • Balsamic salad dressing to serve - optional

    Instructions
     

    • Preheat your oven to 180 degrees.
    • Remove the leaves from the corn cobs and smear approximately 1 tablespoon of butter onto each corn cob before wrapping in foil to completely encase. Place these into the oven and cook for 45 minutes.
    • Meanwhile, drizzle approximately 1 tablespoon of olive oil over the chicken breast and sprinkle with the dried mixed herbs. Place onto a baking tray and cook for 30 minutes or until the chicken breast is cooked through - it’s a good idea to check how it’s going after 20 minutes and adjust your cooking time accordingly.
    • Peel your potatoes and cut into small cubes. Place them into a steamer and cook for 15 minutes or until cooked through. You can also add your eggs to the bottom of the steamer to cook at the same time.
    • Transfer the cooked potatoes to a small bowl and while they are still hot, sprinkle with salt and pepper to taste and carefully mix through the mayonnaise and seeded mustard (if using) and place into the fridge to cool.
    • Transfer the hard boiled eggs into a bowl of cold water and set aside to cool slightly before peeling.
    • Remove the corn and chicken breast from the oven and allow to cool for 10 minutes in the fridge before carefully removing the corn kernels and cutting the chicken into small pieces.
    • Take out a large serving plate and place onto your kitchen bench.
    • Prepare the rest of the salad ingredients, slice the tomatoes into quarters, thickly slice the cucumber into pieces, cut the hardboiled eggs into quarters, chop the carrot into small pieces and tear off the leaves of the Cos Lettuce.
    • Arrange all of the Cobb Salad ingredients on your serving plate and serve immediately with the Balsamic Salad Dressing on the side.

    Competition Terms and Conditions

    6. Winners will be contacted via email at the conclusion of the competition to confirm their address falls within a delivery area, if it doesn’t a new winner will be chosen.

      I’m a super busy Mum (aren’t we all) who would love to not have to find the time to shop. It would help me to encourage my kiddies to eat better (and hide more veg in their food)

      How handy would it be to have your fresh veggies delivered right to your door!! I think will start doing this to avoid the dreaded supermarket shop with the two little ones! The salad looks great.

      We are on operation must fit into our wedding clothes. So trying cleaning eating. A beautiful box of veg would help or weekly menu and our wedding photos.

      Hehehe I’m actually off to restock our fresh fruit and vegetables today. Our nearest F&V shop is 20 minutes away so having them delivered to my door would be just heaven and one less trip to town for me!

      I love this style of salad – always a hit with the little ones. Everyone gets what they want and their is minimal wastage.

      1. that salad looks divine… I’d smash it.
      and 2. I TOTALLY AGREE
      my kids won’t touch salad right, but cut it all up and put it on a plate in pieces and they’ll pick at it all arvo!
      SERIOUSLY, my kids of lived off carrots, tomato, apple slices and cheese all holidays.
      I ask them if they want it and its no.
      I don’t ask and just cut it all up on a plate and leave it on the table, it’s gone!
      Go figure! lol

      I have just returned to work full time and with two little kiddies to chase after, this amazing delivery would be a great help to ease the pressure that us full time mummies face and allow me more time to spend with my children

      Ok I officially need this delivery to my door. I love surprises and the challenge of getting creative in the kitchen to cook with fresh produce. I’ve always heard great things about Aussie Farmers Direct and this post showing what you get in your box is proof we need to organize a delivery.
