Another thing I love about our Aussie Farmers Direct delivery is that it makes it so easy to put together easy family meals, and don’t forget along with milk and fruit and vegetables you can also shop a huge range of meat and poultry items, dairy and my favourite (of course!) baked goods.
This family friendly Chicken Cobb Salad recipe is always a winner in our house and best of all practically all of the ingredients can be delivered to my door. You can easily adjust the ingredients in the Cobb Salad to suit the tastes of your family and we find it makes enough to serve two adults and two kids as a main meal with plenty of yummy leftovers for the next day. It’s also a great recipe for the kids to get involved with and my boys love to help selecting which vegetables we are going to use and of course taste testing along the way!
I can hear many of you saying that your kids would NEVER willingly eat a salad, and I totally get that, however I find by getting the kids involved in putting it together and then letting them serve themselves at dinner time, it not only helps them learn new skills but also encourages them to eat more.
Family Friendly Cobb Loaf Recipe and Win a Fruit and Veg Box from Aussie Farmers Direct
Ingredients
- 1 cos lettuce
- 3 large potatoes
- 2 corn cobs
- 3 carrots
- 4 eggs
- 3 large Tomatoes
- 1 cucumber
- 1 chicken breast - approximately 300g.
- 3 tablespoons of mayonnaise
- 1 teaspoon of seeded mustard - optional
- salt and pepper
- 1 tablespoon of olive oil
- 1 teaspoon of dried mixed herbs
- 2 tablespoons of butter
- Balsamic salad dressing to serve - optional
Instructions
- Preheat your oven to 180 degrees.
- Remove the leaves from the corn cobs and smear approximately 1 tablespoon of butter onto each corn cob before wrapping in foil to completely encase. Place these into the oven and cook for 45 minutes.
- Meanwhile, drizzle approximately 1 tablespoon of olive oil over the chicken breast and sprinkle with the dried mixed herbs. Place onto a baking tray and cook for 30 minutes or until the chicken breast is cooked through - it’s a good idea to check how it’s going after 20 minutes and adjust your cooking time accordingly.
- Peel your potatoes and cut into small cubes. Place them into a steamer and cook for 15 minutes or until cooked through. You can also add your eggs to the bottom of the steamer to cook at the same time.
- Transfer the cooked potatoes to a small bowl and while they are still hot, sprinkle with salt and pepper to taste and carefully mix through the mayonnaise and seeded mustard (if using) and place into the fridge to cool.
- Transfer the hard boiled eggs into a bowl of cold water and set aside to cool slightly before peeling.
- Remove the corn and chicken breast from the oven and allow to cool for 10 minutes in the fridge before carefully removing the corn kernels and cutting the chicken into small pieces.
- Take out a large serving plate and place onto your kitchen bench.
- Prepare the rest of the salad ingredients, slice the tomatoes into quarters, thickly slice the cucumber into pieces, cut the hardboiled eggs into quarters, chop the carrot into small pieces and tear off the leaves of the Cos Lettuce.
- Arrange all of the Cobb Salad ingredients on your serving plate and serve immediately with the Balsamic Salad Dressing on the side.

my kids won’t touch salad right, but cut it all up and put it on a plate in pieces and they’ll pick at it all arvo!
SERIOUSLY, my kids of lived off carrots, tomato, apple slices and cheese all holidays.
I ask them if they want it and its no.
I don’t ask and just cut it all up on a plate and leave it on the table, it’s gone!
