Caramel Lattice Cheesecake Slice

Over the past couple of months we’ve had an influx of visitors at our house which has been the perfect opportunity for me to make all of those recipes I’ve been meaning to try for ages.  I came across the idea for this baked Caramel Lattice Cheesecake Slice recipe from one I spotted on Donna Hay’s website and decided to modify it based on the ingredients and equipment I already had.

Baked Caramel Cheesecake Slice

I made this Cheesecake Slice for my Mum and Sister who are both huge cheesecake fans and can never resist anything with caramel in it either!  One of the things I like about using the lattice biscuits for this recipe is that it makes it super easy to cut this slice into perfect sized squares and there is no arguing (well in theory!) over who has the bigger piece!

Ingredients
  

  • 1 x 200g packet of Lattice Biscuits
  • 2 x packs of cream cheese - softened
  • 1/2 cup of brown sugar
  • 1 1/2 teaspoons of golden syrup
  • 1 1/2 teaspoons of vanilla extract
  • 2 eggs

Instructions
 

  • Preheat your oven to 150 degrees and line a 20 cm x 20cm cake tin with baking paper.
  • Place a layer of the lattice biscuits sugar side down along the bottom of the lined tin.
  • Place the softened cream cheese, brown sugar, vanilla extract and golden syrup into the bowl of an electric mixer and beat for 6 - 8 minutes or until the mixture is smooth and the sugar has dissolved.
  • With the mixer still going, add the eggs one at a time and continue to mix until combined.
  • Pour the caramel cheesecake mixture over the top of the lattice biscuits already in the prepared tin and lightly smooth the surface.
  • Cover the surface of the cheesecake with Lattice biscuits, placing them sugar side up and place the tin into the oven for 45 minutes or until it has little give when tested.
  • Allow the cheesecake to cool on your bench for 10 minutes before transferring it to the fridge to cool completely - give it at least 2 hours.
  • Once chilled, remove from fridge and tin and cut into pieces to enjoy.

Thermomix Caramel Lattice Cheesecake Instructions:

1. Preheat your oven to 150 degrees and line a 20 cm x 20 cm cake tin with baking paper.  Place a layer of the lattice biscuits sugar side down along the bottom of the lined tin.

2. Place the softened cream cheese, brown sugar, vanilla extract and golden syrup into your Thermomix bowl and mix for 30 seconds on speed 5.  Scrape down the sides of the bowl before mixing for a further 30 seconds on speed 5 or until the mixture is smooth and the sugar has dissolved.

3. Add both of the eggs and mix for a further 20 seconds on speed 3. Scrape down the sides and mix for a further 10 seconds on speed 3.

4. Pour the caramel cheesecake mixture over the top of the lattice biscuits already in the prepared tin and lightly smooth the surface.

5. Cover the surface of the cheesecake with Lattice biscuits, placing them sugar side up and place the tin into the oven for 45 minutes or until it has little give when tested.

6. Allow the cheesecake to cool on your bench for 10 minutes before transferring it to the fridge to cool completely – give it at least 2 hours. Once chilled, remove from fridge and tin and cut into pieces to enjoy.

This Caramel Lattice Cheesecake Slice was a huge hit with everyone and we were all a little disappointed when the last piece mysteriously disappeared from the fridge – especially when no one would own up to eating it!

    Lauren I do love a lattice slice, especially loving the idea of trying a baked version, sounds so deliciously light and silky!

    Hi Lauren,

    I am glad I found your page with your beautiful recipes. I made the Caramel Lattice Cheesecake Slice along with the Jelly Slice with the Strawberries set in it. A real hit at my granddaughter’s birthday party last Saturday with the parents. I also gave some to close friends after the party, they gave some to their friends and WOW what more can I say. I will be checking more of your recipes in the near future printing the Spinach & Three Cheese Triangles & Peppermint Cheesecake Slice to prepare next week.

    A question, I intend to make the Jelly Slice but with a little different twist to it by adding different jelly but would like to know fruit would I use for the following jellies?

    Orange
    Port Wine
    Lemon & more & more…

      Hi Leeanne, I’ve made the jelly slice using Lime and Port Wine Jelly before, and I don’t see why you couldn’t use any other flavours. I’d love to hear how you go 🙂

        Thank you however, what I meant was what fruits would I lay on under the different jellies? Like the strawberries under the Strawberry Jelly & so on?

    Just wondering if you can FREEZE this slice, as I want to make this before my shoulder on 17 June and house warming party on the 22nd

      Hi Karen, I haven’t tried freezing this slice before I’m sorry. I think it could be ok though, I’d only be worried that the biscuit layer may go a little soggy when defrosted though. Sorry I can’t be of more help.
