Now that Winter is upon us, there is a little bit of a comfort food theme with my picks this week. Don’t forget to check Bake Play Smile to see Lucy’s picks of the week.
These Vietnamese Rolls with Leftover Pork Belly from Good Food Week are my ideal weekend meal. You can cook the Pork Belly for Dinner on Friday night, and then enjoy these yummy rolls with the leftover meat over the weekend. Yum!
This recipe for Easy Peasy Beef Cheeks by Zamamabakes just screams “Winter” for me. I can’t think of anything better than tucking into a plate of this on a cold Winters day. I love a good bread pudding, and this Savoury Bread Pudding by Miss Food Fairy looks just perfect to use up leftover bread and rolls, as well as sneak in a few veggies for the kids. In fact, it’s on our menu this week! Who doesn’t love cheesecake 🙂 This Ricotta Cheesecake by Delicious by Ana looks so smooth and creamy – the perfect way to finish a meal. These Pumpkin and Pistachio Cheesecake Stacks by Fresh Home Cook intrigue me. It’s certainly a different flavour combination, and I can’t wait to try it.
For the past couple of weeks I’ve been met with sight of a lonely sheet of puff pastry every time I open the freezer door – a leftover from the sausage rolls I made recently for our baby boy’s birthday party. My husband had tried to throw it out, claiming I wouldn’t use it and it would just dry up and have to be thrown out anyway. I was determined to prove him wrong and last weekend I set myself the challenge to put it to use. Looking through our fridge and noticing we had an oversupply of eggs, plus some bacon and parmesan cheese which also needed to be used, I quickly decided to make an egg and bacon pie. This is a really easy meal to put together. I cooked it in the morning and then that night I covered the dish with foil and popped it back into the oven for approximately 20 minutes on 170 degrees to reheat it. We served it with homemade tomato relish (YUM!), roasted pumpkin, steamed broccoli and a packet of Continental’s Alfredo Pasta. My husband was impressed not only with the fact I’d actually used the leftover pastry, but he also enjoyed the pie. Fortunately I wrote down what went into the pie and what I did as I didn’t follow a recipe and this will definitely be making another appearance on our dinner table.
